hot sour soupHot and Sour Soup is a popular Chinese soup recipe, and is served in most the Chinese restaurants in the Caribbean. Hot and sour soup is presumed to be good recipe for colds. To increase the recipe health benefits, feel free to add 2 or 3 teaspoons of finely chopped ginger.

For a vegetarian version of Hot and Sour Soup, leave out the pork.

Hot and Sour Soup Recipe Ingredients:

  • 4 Chinese mushrooms (dried)
  • ½ cup bamboo shoots
  • 4 cups chicken stock
  • 1 tablespoon soy sauce
  • 1 egg, lightly beaten
  • 2 teaspoons seasame seed oil
  • 2 squares (3″) bean curd
  • ¼ lb. teaspoon pork
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • 1 green onion, finely chopped

How to Make Hot and Sour Soup:

Soak mushrooms in warm water for 30 minutes. Drain and chop into strips. Drain bamboo shoots and bean curd, rinse in cold water and chop like mushrooms. Trim pork off all fat and chop into very this pieces 2″ long. Then in saucepan combine stock, salt, soy sauce, mushrooms, bamboo shoots and pork.

Bring to a boil over high heat for 3 minutes. Drop in bean curd and pepper and vinegar. Bring to a boil again. Combine cornstarch with cold water and pour into soup. Stir for a few seconds until sop thickens. Then stir in beaten egg stirring gently all the time. Remove soup from heat stir in sesame-seed oil and sprinkle top with chopped green onions. Serve at once.

garlic pork

Garlic Pork is a traditional Christmas dish of Portuguese origin, very popular in Guyana and Trinidad where the Portuguese settled.

This garlic pork recipe makes a great family meal when served with vegetables, peas, carrots, and corn together with Basmati rice. Give it a try, you will be happy you did.
Garlic Pork Recipe Ingredients:

  • 2 lbs. spare ribs or pork butt
  • 1 sprig fresh thyme, chopped
  • 1 whole fresh hot pepper
  • ¼ lb. garlic
  • 2 tablespoons salt
  • 2 ½ cups white vinegar

How to Make Garlic Pork:

Cut pork into small pieces (do not wash, keep clear from any water.) Crush garlic and mix with thyme and put into a large glass jar with a wide mouth. Then add salt and put pieces of port into jar. Top with vinegar and allow to stand unrefrigerated for about 3 weeks. Then remove from brine, drain well (squeeze dry if necessary) and fry in hot oil. Serve immediately as finger food with drinks.

delicious spinach pie

Spinach Pie, which is sometimes called spanakopita, but there is a difference. The long name comes from a combination of the words “spanaki” (spinach), “tyri” (cheese), and “pita” (pie). Pull out all the stops with this Caribbean version of spinach pie that includes the tastes of nutmeg, pepper, and Parmesan cheese for a fabulous result.

Spinach Pie Recipe Ingredients:

  • 1 9″ pie crust (baked)
  • 2 tablespoons butter
  • 1 pound fresh spinach
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • 2 tablespoon milk
  • 1 cup whipping cream
  • 1 small onion, chopped
  • 6 mushrooms
  • 1 oz. Parmesan cheese
  • ¼ teaspoon pepper
  • 2 cups cottage cheese
  • 2 eggs
  • 4 ozs. Cheddar cheese
How To Make Spinach Pie:

Cook spinach until wilted. Rinse under running cold water, then cool and squeeze dry. Chop Parmesan cheese in medium size bits and set aside. Melt butter in skillet over hear and add onion, saute for about five minutes. Set aside. Chop mushrooms in slices and add to onion. Then chop spinach and add to onion. Add seasonings and place over heat, mixing well. Line pie crust with cottage cheese (half) and then mix other half with onion mixture. Add milk and top cottage cheese with onion mixture in pie crust. Grate cheddar cheese in bowl. Then add eggs and whipping cream and mix for one minute. Soon over onion mixture on crust sprinkles with Parmesan cheese and bake a 400F for about 20 minutes. Allow to stand for 15 minutes before serving.
