Vanilla custard or Sweet Vanilla Custard Sauce is a perfect accompaniment to hot desserts, cobblers and pies. A simple vanilla custard can be served hot or cold.

The serve eight, you will need 600ml (1 pint) full-fat milk, one vanilla pod or 1 tbsp vanilla extract, 6 large egg yolks, 2 tbsp golden caster sugar and 2 tbsp of cornfour.

1. Put the milk in a pan. Split the vanilla pod and scrape the seeds into the pan, then drop in the pod. If you’re using vanilla extrac, pour it in. Bring to the boil, then turn off the heat and leave to cool for 5 minutes.

2. Put the eggs yolks, sugar, and cornflour in a bowl and whisk to blend. Remove the vanilla pod from the milk and gradually whisk the warm milk into the egg mixture.

3. Rinse out the pan. Pour the custard back in the heat gently, whisking constantly, for 2-3 minutes. The mixture should thicken enough to coat the back of the wooden spoon in a thin layer. Remove the pan from the heat.

4. If your are not serving the custard immediately, pour it into a jug, Cover the surface with a round of wet greaseproof paper to keep a skin from forming, then cover eith clingfilm and chill. To serve hot, reheat very gently.

Fresh homemade Mint Sauce Recipe. And what goes well with mint sauce? Lamb, obviously! This mint sauce recipe is a classic in its own right, and it’s quick & simple to make.

Mint Sauce Recipe Ingredients

  • 1 cup white vinegar
  • 3 tbps chopped fresh mint
  • 2 tbps boiling water
  • 2 tsp white sugar
  • 1/4 tsp salt

How to Make Mint Sauce:

  1. Wash and dry mint. Remove stalks and chop very fine. Combine mint, salt and sugar in a bowl.
  2. Then add boiling water. Set aside and when cold add vinegar. Pour into covered jar or bottle and shake well.

Cool Cuke (Cucumber) Recipe. Cucumber with hard-boiled eggs and sardines. What a lovely cucumber recipe.

Cool Cukes Recipe Ingredients

  • 2 Cucumbers
  • 1/2 cup mayonnaise
  • 2 hard-boiled eggs
  • 1/2 green hot pepper, chopped
  • 1 can sardines, drained
  • 1 tbsp chopped parsley
  • 1 tsp salt
  • 1 tbsp grated onion
  • 1 tsp lemon juice

How to Make Cool Cukes:

  1. Cut cumcumber into 2″ lenghts and then in half the other way, to make small pieces for filling. Remove the soft centres and set aside.
  2. Drain and mash sardines in bowl. Add mayonnaise, lemon juice, onion, hot pepper and mix, Chop parsley and hard-boiled eggs and add to sardine.
  3. Add salt. Then fill cucumber pieces with mixture and arrange on platter. Chill for half an hour or more and serve garnished with watercress or lettuce leaves.
