Caribbean recipe for sweet potatoes stewed. Sweet Potato Stewed Recipe Ingredients:

  • 1/4 cup brown sugar
  • 4 medium sweet potatoes
  • 1 tbsp cinnamon
  • 1/2 cup water
  • 3 tbsp butter
  • 1 tsp ground nutmeg

How to Make Sweet Potato Stewed:

  1. Coat th saucepan with a little butter. peel,wash and slice potatoes inot 1/2″ thick pieces. Combine sugar and nutmeg. Then place a layer of potatoes in greased saucepan and sprinkle with sugar mixture.
  2. Place another layer of potatoes and coat with sugar mixture until all ingredients are used up. Place cinnamon stick in the centre of potatoes.
  3. Dot balance of butter on top of potatoes, pour water over and bring to a boil over fire. Reduce heat, cover tightly and simmer until tender –approx 30-40 minutes.

Hazelnut torte with ice cream
Hazelnut Torte Recipe Ingredients:

  • 4 eggs
  • 2 tbsp flour
  • 1 cup hazelnuts
  • 3/4 cup white sugar
  • 2 & half tsp baking powder
  • Mocha Filling

  • 2 tbsp soft butter
  • 1 cup icing sugar
  • 2 tbsp hot strong coffee
  • 1 tsp vanilla
  • 1 cup whipping cream
  • 1 tbsp cocoa powder

How to Make Hazelnut Torte:

  1. In blender, whirl eggs and white sugar until thoroughly mixed. Add flour, baking powder and hazelnuts. Blend at high speed. Pour into 2-8 inch greased layer pans. Bake at 350F for about 20 minutes.
  2. Making filling by creaming together butter and icing sugar. Add coffee, cocoa and vanilla. Spread between layers. Whip cream and spread over top of cake. Garnish with fresh strawberries.

Caribbean-Style Grilled Shrimp And Pineapple

This recipe of Caribbean-style grilled shrimp and pineapple is an absolute treat for those warm summer evenings.

Grilled Shrimp and Pineapple Recipe Ingredients

  • 1/2 cup lime juice
  • 4 garlic cloves
  • 2 tbsp achiote seeds or equal parts turmeric and paprika
  • 2 tsp allspice berries
  • 2 tsp dried oregano
  • 2 tsp salt
  • 1 1/2 tsp whole black peppercorns
  • 1/2 cup extra virgin olive oil
  • 1 pineapple, peeled, cored, and chopped into 1/2 in. thick slices
  • 2 onions, cut into 1/2 in. wedges
  • 3 sprigs, fresh Oregano
  • 1 lb. shrimp
  • 1 lemon, cut into wedges
  • Skewers

How to Make Caribbean-Style Grilled Shrimp and Pineapple:

  1. Soak the skewers in cool water for 30 minutes.Blend lime juice, garlic, achiote seeds, allspice berries, oregano, salt and peppercorns in a KitchenAid Blender until smooth.
  2. Gradually add olive oil to the mixture as the blender is running to create an emulsion. Assemble the skewers with 3 shrimp, 3 pineapple wedges, and 2 onion pieces and transfer to a shallow pan.
  3. Add three sprigs of fresh oregano to the pan of skewers once they are finished being assembled. Pour the achiote paste over the skewers evenly and marinate for 1-3 hours.
  4. Prepare a charcoal grill to high heat.Place the skewers on the grill and cook about 3-4 minutes a side.Serve with a squeeze of lemon.
