Moist and delicious Caribbean Style Fruit Bread with chopped nuts, bananas, grated carrots, raisins, and hints of nutmeg, vanilla, & cinnamon.

I still remember the first time I tasted Fruit bread. After one bite, I was sold forever. An assortment of Fruits, mixed into the batter, brings moisture and tender texture to what is essentially a spice cake.

Fruit Bread Recipe Ingredients:

  • 2 large very ripe bananas
  • 1 teaspoon vanilla
  • ¼ teaspoon nutmeg
  • 1/3 cup milk
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon chopped nuts
  • 2 eggs
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 2 tablespoons baking power
  • 2 cups flour
  • 4 tablespoons raisins
  • ¾ cup grated carrots

Fruit Bread Recipe Instructions:

Mash bananas until very soft and whip until smooth. Add eggs, vanilla, salt, spices, sugar and milk. Beat again until smooth. Combine baking powder and soda into flour, and add raisins and nuts. Add carrots to banana mixture and ten add flour mixture gradually. Pour into greased loaf pan and bake in hot oven at 350F for 45-60 minutes.
