- 500 g (1 lb 2 oz) cassava
- 1 egg, beaten
- 50 g (2 oz) margarine
- 15 ml spoon (1 tbsp), baking powder
- salt and white pepper to taste
- little flour for coating
- oil for frying
|Put cassava in a saucepan of water to cover. Bring to the boil and cook, to covered, for about 20-30 minutes. Drain and mash in a large bowl.Add egg, margarine, baking powder, salt and pepper. Blend well.
Shape mixture into small balls.Heat oil in a frying pan. Toss balls in flour and fry until golden brown.
Drain on absorbent paper, serve hot.
