Flying Fish Melts in Cheese Sauce Ingredients:

  • 1 ½ lb (681g) melts
  • Juice of 1 lime
  • 4 tbsp margarine
  • 2 tbsp flour
  • ½ pint (280 ml) milk
  • 2 oz (56 g) cheese, grated
  • 1 tbsp chopped parsley
  • 2 tsp grated onion
  • Salt and pepper
  • 1 oz (28 g) white breadcrumbs

How to Make Flying Fish Melts in Cheese Sauce:

  1. Wash the melts. Place them in salted water with the lime juice and set aside for a few minutes. Melt 2 tablespoons of the margarine. Mix the flour to a smooth paste with a little milk, and then add all the milk.
  2. Combine with the melted margarine and stir constantly over a low heat until the mixture thickens and is quite smooth. Add the grated cheese, parsley, onion, and salt and pepper to taste, stirring until the cheese has melted.Drain the melts, and steam them for 5 minutes.
  3. Add the melts to the cheese sauce. Pour the mixture into greased individual ramekin dishes, top with white breadcrumbs mixed with 2 tablespoons of melted margarine and bake in a moderate oven, 350°F, until lightly browned.

Flying Fish Melts (Barbados) are the soft roe of the fish and are extremely tender and tasty. Serve this dish as an appetizer.
