Avocado and Tuna Salad

This can be served as luncheon salad or a buffet dish.

Ingredients:

  • 1 ripe avocado
  • 2 tomatoes, chopped
  • 4 tbsp. (60 ml) Vegetable oil
  • 2 tbsp (30 ml) vinegar
  • 1 garlic clove, crushed
  • salt and pepper to taste
  • 1 tsp (5 ml) sugar
  • 1 tsp (5 ml) hot pepper sauce
  • 6.5 oz (184 g) can of tuna
  • 1 small onion, finely chopped
  • ¼ cup (50 ml) chopped green onion
  • lettuce

Cooking Instructions:

  • Peel, pit and chop the avocado. Add chopped tomatoes.
  • Combine oil, vinegar, garlic, salt, pepper, sugar and pepper sauce. Pour over avocado and tomato.
  • Break tuna into bite-sized pieces, add onions and green onion.
  • Combine tuna and tomato mixtures. Stir together until well mixed.
  • Refrigerate until cold. Serve on a bed of lettuce.

Serves 4-6

Avocado Shake (Caribbean) Recipe
Avocado Shake Ingredients:

  • 1 ripe avocado
  • 1 pint (560 ml) milk
  • 1 oz (28 g) sugar
  • ¼ tsp vanilla essence
  • ¼ tsp nutmeg

How to Make a Avocado Shake:

  1. Halve the avocado, remove the seed and scoop out the flesh.Puree or crush and place in a mixing bowl.
  2. Add the milk, sugar, vanilla essence and nutmeg. Stir until the mixture is smooth then whisk for a few minutes. Pour into a jug and chill before serving.

Serves:3

Avocado Dip

Avocado Dip Recipe is a smooth rich dip recipe – add pepper sauce if you like it hot.

Avocado Dip Ingredients

  • 2 ripe avocados
  • 2 garlic cloves, minced
  • 1 tsp lemon juice
  • 1 tsp hot pepper sauce (optional)
  • salt and pepper to taste

How To Make Avocado Dip:

  1. Peel avocados, and then mash with a fork.
  2. Stir in the minced garlic, lemon juice, salt and pepper..
  3. Add hot pepper sauce to taste and mix well. When cooked, the coo-coo mixture will be thick and smooth.
  4. Chill before serving. Serve with fresh vegetables, crackers or corn chips.

    Note: The avocados should be firm but not hard.

    Variation: Finely chopped ripe tomato add colour and flavour.
