grilled vegetable saladTitan Of Grilled Vegetable Salad, With Two Juices Mango Vinaigrette Ingredients:

  • 1 Med. Onion
  • 2 Med. Eggplants (Aubergines)
  • 2 Med. Zucchinis (Courgettes)
  • 2 Med. Carrots (sliced)
  • 1/4 Cup (60 ml) Virgin Olive Oil
  • 1tbsp. Vinegar
  • 2 Fresh Mangoes (diced)
  • 1 Baby Lettuce
  • Salt & Pepper to taste
  • Sprig of mint to garnish

Preparation for Marinade

Slice the onion, eggplants, zucchinis and carrots in a container, add olive oil, salt and pepper. Mix and Marinade for 10 – 20 minutes.

Two Juice Mango Vinaigrette

our vinegar, olive oil and mango pieces into a blender. Pulse for 10 seconds.

Heat grill to 200º/ 400º/ Gas Mark 6. Place marinated vegetables on a griddle. Cook 1–2 minutes each side or until properly marked. Place vegetables back into container and allow to cool. Stack vegetables upwards on a plate with diced mangos and baby lettuce. Drizzled with two juice mango vinaigrette. Garnish with mint.

Passion Fruit now in my list of favorites: you can make very easy and quick a natural juice, which is not only tastes wonderful, but also very useful. For to prepare passion fruit juice you do not need (as for many other exotic fruits) to torment to clean the skin or squeeze a juice.

Passion fruit has oval shape with thick yellow skin (or in some places of the world it is violet), which is enough to pierce by the end of sharp knife on 2-3 centimetres and then easily to turn across the diameter of the fruit, dividing passion fruit on two halves. Inside it will be yellow sweet and sour gruel and seeds.

Scrap by spoon to any convenient deep dish, add sugar to taste (I usually do 4-5 tbsp sugar to 4-5 passion fruits) and blend or mix well with a fork.

Then add three or four cups of water (liquid should be juicy-amber colour) and mix well (or use blender). Strain the seeds through a sieve to the juice jar and squeeze well seeds with pulp. Try to taste the juice, and if necessary – add sugar. The whole process takes literally two or three minutes.

I use to work at Hotel called the Fort Young Hotel, and this was one of my most favorite cocktail recipes. At the hotel they were called Exotic Fruit Punch. Now I’m not working at the hotel, when some of my friends drop by to visit and I put this together in the blender. They are dying to know my recipe, well I guess today is their lucky day. Fruit punch (Mele) is refreshing cocktail anytime of the year and great for people on fruit diets.

Tropical Fruit Punch Recipe Ingredients:

  • 1 cup paw paw slices
  • 1 ripe banana
  • 2 tablespoons honey
  • 2 slices pineapple
  • 1 cup orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon grenadine syrup
  • 6-8 block of ice-cubes
Tropical Fruit Punch Recipe Instructions:

Combine fruit, fruit juices, honey and grenadine in blender. Then add ice-cubes and blend until very cold and is well blended. Serve in wide glasses immediately while mixture still holds a head. Finally garnish with a Cherry or a slice on pineapple.
