Avocado and Tuna Salad

This can be served as luncheon salad or a buffet dish.

Ingredients:

  • 1 ripe avocado
  • 2 tomatoes, chopped
  • 4 tbsp. (60 ml) Vegetable oil
  • 2 tbsp (30 ml) vinegar
  • 1 garlic clove, crushed
  • salt and pepper to taste
  • 1 tsp (5 ml) sugar
  • 1 tsp (5 ml) hot pepper sauce
  • 6.5 oz (184 g) can of tuna
  • 1 small onion, finely chopped
  • ¼ cup (50 ml) chopped green onion
  • lettuce

Cooking Instructions:

  • Peel, pit and chop the avocado. Add chopped tomatoes.
  • Combine oil, vinegar, garlic, salt, pepper, sugar and pepper sauce. Pour over avocado and tomato.
  • Break tuna into bite-sized pieces, add onions and green onion.
  • Combine tuna and tomato mixtures. Stir together until well mixed.
  • Refrigerate until cold. Serve on a bed of lettuce.

Serves 4-6

Easy Caribbean Green Mango Salad, that will blow you away and have you coming back for more.

Green Mango Salad Ingredients

  • 2 tsp lime juice
  • 4 green mangoes
  • 2 green onions
  • 1 tsp salt
  • 1/2 hot green pepper

How To Make Green Mango Salad:

  1. Peel mangoes and cut into 1 1/2 pieces. Then in a bowl chop green onions. Add pepper and salt. Then pour over 1/2 cup vary hot water. Allow to stand for 2 minutes.
  2. Add lime juice and pour over mangoes and allow to stand for another 2 minutes. Then Serve.

Green Banana Super Salad Recipe: Dare to try something new? Try this exotic Caribbean Recipe; a yummy alternative to potato salad, get the bananas at your local market or at the Caribbean grocery store in your area.

Ingredients:

  • 6 green bananas
  • 2 green onions
  • 2 teaspoons lime juice
  • ¼ cup hot water
  • 1 clove garlic (crushed)
  • Hot pepper sauce
  • Salt
  • Parsley (for garnish)

How to Make Green Banana Super Salad:

Wash green bananas and cut off tip at both ends. Cook in boiling water to which ½ lime juice and salt has been added until tender. Peel and cut into rounds and set aside. In a bowl, combine 1 teaspoon lime juice, salt, chopped green onions, garlic, and hot water. Allow to stand for 5 minutes. Add hot pepper sauce and green bananas rounds. Stir well and serve garnished with parsley.
