Spanish Pie Recipe Ingredients:
- 1 9″ pie crust (baked)
- 2 tbsp butter
- 1 lb fresh spinach
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 2 tbsp milk
- 1 cup whipping cream
- 1 small onion, chopped
- 6 mushrooms
- 1 oz. Parmesan cheese
- 1/4 tsp pepper
- 2 cup cottage cheese
- 2 eggs
- 4oz. cheddar cheese
How to Make a Spanish Pie:
- cook spinach until wilted. Rinse under running cold water, then cool and squeeze dry. Chop Parmesan cheese in medium size bits and set aside. Melt butter in skillet over heat and add onion, saute for about five minutes. Set aside.
- Chop mushrooms in slices and add to onion. Then chop spinach and add to onion. Add seasonings and place over heat, mixing well. Line pie crust with cottage cheese (half) and then mix other half with onion mixture. Add milk and top cottage cheese with onion mixture in pie crust.
- Grate cheddar cheese in bowl. Then add eggs and whipping cream and mix for one minute. Spoon over onion mixture on crust. Sprinkle with Parmesan cheese and bake at 400F for about 20 minutes. Allow to stand for 15 minutes before serving.
