Sift the dry ingredients together and cut in the margarine. Add the grated sweet potato. Add enough milk to make a soft dough. Turn onto a floured board and knead gently.
Shape into balls and flatten into biscuit-shaped rounds. Place on a greased baking sheet and bake at 425°F for about 15-20 minutes, until cooked.
This sweet potato pudding recipe is an old time recipe my great aunt use to make every the summer time. I remember this like it was yesterday. Peel, wash and grate potatoes. Grate coconut and combine with sweet potato. Add butter, ginger, sugar, and spices. Mix well. Add milk, mix again and pour into greased baking dish. Bake at 350F for about one hour, or until all the liquid is absorbed and pudding is golden brown.
