Avocado and Tuna Salad

This can be served as luncheon salad or a buffet dish.

Ingredients:

  • 1 ripe avocado
  • 2 tomatoes, chopped
  • 4 tbsp. (60 ml) Vegetable oil
  • 2 tbsp (30 ml) vinegar
  • 1 garlic clove, crushed
  • salt and pepper to taste
  • 1 tsp (5 ml) sugar
  • 1 tsp (5 ml) hot pepper sauce
  • 6.5 oz (184 g) can of tuna
  • 1 small onion, finely chopped
  • ¼ cup (50 ml) chopped green onion
  • lettuce

Cooking Instructions:

  • Peel, pit and chop the avocado. Add chopped tomatoes.
  • Combine oil, vinegar, garlic, salt, pepper, sugar and pepper sauce. Pour over avocado and tomato.
  • Break tuna into bite-sized pieces, add onions and green onion.
  • Combine tuna and tomato mixtures. Stir together until well mixed.
  • Refrigerate until cold. Serve on a bed of lettuce.

Herb Grilled Tuna Recipe – Fresh grilled tuna coated with local herbs.

Ingredients:

  • 1.30 pounds 2 fresh, yellow-tail, steaks tuna
  • 1 tablespoon fresh, flat-leaf parsley
  • 1 tablespoon fresh oregano
  • 1 tablespoon fresh, spearmint mint
  • 1 clove garlic
  • 3 tablespoons extra virgin olive oil
  • 1 lemon
  • salt & pepper

Cooking Instructions:

Start by preheating our gas grill to medium-high heat. Rinse and pat dry the tuna steaks and place them on a plate. In a ramekin, combine the herbs, and add in the garlic with our garlic press. Add the oil and salt and pepper. Using our microplane, add the zest from the lemon. The rest of the lemon we cut into slices and set aside. Then stir the sauce and put half of it in a prep bowl for drizzling on the tuna steaks at the end.

Use the remaining herb sauce to coat the steaks, rubbing it onto both sides of the tuna. Then add additional salt and pepper and grill for a few minutes on each side until desired done. Cook until the steak is medium to medium. Serve half a steak per person, with the lemon slices, and drizzled with the reserved sauce.

Tuna in Tomato Sauce Recipe Ingredients:

  • 4 tuna steaks
  • juice of 2 limes
  • 2 garlic cloves, crushed
  • 1 fresh red chilli, seeded and crushed
  • pinch of salt
  • 300ml/ 1/2 pint water
  • flour for dredging
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 spring onions, chopped
  • 1 red pepper, seeded and chopped
  • 3 tomatoes, skinned and chopped
  • 1 bay leaf
  • sprig of fresh thyme
  • salt and freshly ground black pepper
  • 50ml/ 2 fl oz dry white “wine or water

To serve:

  • juice of 1/2 lime
  • 1 tablespoon olive oil
  • lime wedges

How To Make Tuna in Tomato Sauce

  1. Put the tuna steaks in a shallow dish. Blend together the lime juice, garlic, chilli and salt, and sprinkle over the tuna steaks. Pour the water over the top and leave to marinate in a cool place for 1-2 hours.

  2. Drain the tuna and throw away the marinade. Dredge the tuna with flour and then fry in the oil in a large frying pan until golden brown on both sides. Remove from the pan and keep warm while you make the sauce.

  3. Add the onion, spring onions and red pepper to the oil in the frying pan and fry gently until softened. Stir in the tomatoes and add the bay leaf. thyme, seasoning and wine or water. Simmer gently for a few minutes.

  4. Add the tuna steaks to the tomato sauce in the pan. Cover and continue cooking gently for 10 minutes, or until the tuna is cooked. Stir in the lime juice and olive oil, and serve immediately with a garnish of lime wedges.

Preparation: 10 minutes + Marinating Time

Serves: 4
