Carrot Muffins Recipe: Fabulous Caribbean style – light, fluffy, packed with carrots, chopped nuts, and raisins. An all time Caribbean favorite.
Ingredients:
- 1 ¼ cups vegetable oil
- 2 cups sugar
- 3 cups flour
- 4 eggs
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 cup raisins
- 1 pinch salt
- 2 cups grated carrot
- 1/4cup chopped nuts
How to Make Carrot Muffins
Beat sugar and oil in a bowl until well blended. Add eggs and best for a few minutes. Combine flour, baking powder, baking soda and salt. Gradually blend in dry ingredients with oil mixture mixing well. Add carrot, raisins and nuts. Spoon mixture into well-greased muffin tins and bake in preheated oven at 350F for about 40 minutes. Serve warm with butter.
