fried calf liverLiver with Brandy Recipe Ingredients:

  • ½ lbs. calf liver
  • 8 ozs. Mushrooms
  • 2 ozs. Butter
  • 8 ozs. Rice
  • 2 tomatoes
  • 1 tablespoon brandy
  • 1 clove garlic
  • Salt, pepper
Instructions on how to cook Liver with Brandy :

Cook the rice and keep warm. Melt 1/2 oz. butter and saute quartered tomatoes gently. Add sliced mushrooms. Set aside. Using rest of butter, fry thin liver slices after sprinkling with salt, pepper and garlic. Place liver on top of rice, pour warmed brandy over liver and serve immediately. Garnish with tomatoes and mushrooms.

ox tongue dishOX Tongue Recipe Ingredients:

  • 1 ox tongue
  • 1 tablespoon vinegar
  • 2 cloves garlic
  • 1 medium onion
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 tablespoon margarine
  • 2 tablespoons dry sherry
  • Salt, pepper
Instructions on how to cook OX Tongue :

Cook tongue in 3 cups water, vinegar, 1 teaspoon salt, 1 clove garlic and bay leaf in pressure cooker for about 25-30 minutes (varies according to size).

Remove from liquid and set ox tongue aside. Saute onion in margarine. Add 1 cup water and bring to a boil. Add salt, pepper and sherry. Thicken with mixture of 1 tablespoon flour and 1 tablespoon warm water. Add tongue which has been sliced, and allow simmering for 3 minutes. Serve immediately on warm plates.

Some people hear Colonial Chicken, and they think KFC 🙂 – Colonial Chicken recipe is one of those recipes that every home cook should have in their collection. It uses a small amount of ingredients – chicken, onions, stock, green pepper, sour cream, paprika, and butter – and is especially useful on those busy days when you’re just too busy to get creative.

Ingredients:

  • 1 chicken (cut into pieces)
  • 2 large onions, sliced
  • 1 tomato chopped
  • 1 cup stock
  • 1 clove garlic, crushed
  • ¼ cup butter
  • 1 green pepper, sliced
  • 1 tablespoon paprika (spice made from peppers)
  • 1 cup sour cream
  • 1 cup sour cream


Method:

Wash and drain chicken. Put into a bowl and sprinkle with salt, pepper, and garlic. Mix well and allow standing for 2-3 hours. In a large skillet, heat butter and brown chicken pieces – removing from pan as they are done. Then sauté onions, green pepper and tomato until wilted. Add paprika and stock. Bring to a boil point and add chicken pieces. Cover and simmer until tender (about 40 minutes). Remove chicken to platter and keep warm. Stir in sour cream, but do not allow it to boil. Spoon over chicken and serve hot.
