Nowadays who has time to slave over the dish for hours, One-pot meals are nourishing, quick and easy to prepare. This Cook-up Rice recipe (aka Caribbean Rice) might just be the one-dish you need to include your busy schedule. Go ahead – give it a try and put your own spin on this delicious one-pot recipe.
Ingredients
- 150g (6 oz) Stewing beef
- 100g (1/4 lbs) salted beef
- 1 blade chive (escallion)
- 1 onion sliced
- 225g (1/2 lbs) carrots - diced
- 2 cups rice
- 4 cups water
- 1 red sweet pepper
- 4-6 lettuce leaves
- 1 large tomato
Instructions
- Put salted meat to soak in cold water. Drain. Wash and cut beef and salted meat into small pieces.
- Cook in 2 cups water, with chive and sliced onion. Add salt, if necessary. When meat is cooked, add carrots and rice, and continue cooking until rice is done. Mix in margarine.
- Arrange lettuce one platter. Heap cooked rice mixture in the center, and decorate with sliced tomato and sweet pepper.
