Here is a recipe for Traditional Caribbean Peppersauce (hot sauce):

Ingredients:

10-12 scotch bonnet peppers, stemmed and seeded
4 cloves garlic
1 small onion, roughly chopped
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 cup vinegar
1/4 cup water

Instructions:

In a blender or food processor, combine the scotch bonnet peppers, garlic, onion, salt, and black pepper. Blend until the mixture is smooth.

Heat the olive oil in a small saucepan over medium heat.

Add the pepper mixture to the pan and sauté for 2-3 minutes, or until the mixture is fragrant.

Add the vinegar and water to the pan and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 5-10 minutes, or until the sauce has thickened slightly.

Remove the sauce from the heat and let it cool for a few minutes.

Transfer the sauce to a jar or bottle and store it in the refrigerator for up to 3 months.

Serve the peppersauce as a condiment with your favorite dishes, or use it as a marinade or seasoning. Enjoy!
