  • 1 tbsp ginger, minced
  • 1 scotch bonnet pepper, chopped (optional)
  • 2 tbsp vegetable oil
  • 2 cups chicken broth
  • 1 can coconut milk
  • 2 potatoes, peeled and diced
  • Salt and pepper, to taste

Directions:

  1. In a bowl, mix together the Jamaican curry powder, allspice, and thyme. Season the chicken pieces with the spice mixture and set aside.
  2. Heat the vegetable oil in a large pot over medium-high heat. Add the chicken pieces and brown on all sides, about 5 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onion, garlic, ginger, and scotch bonnet pepper (if using). Cook for 2-3 minutes until the onions are softened.
  4. Add the chicken broth and coconut milk to the pot and stir to combine. Bring the mixture to a simmer.
  5. Add the chicken pieces back into the pot and stir to combine. Add the diced potatoes and season with salt and pepper.
  6. Cover the pot and simmer for 30-40 minutes, until the chicken is cooked through and the potatoes are tender.
  7. Serve hot with rice and peas or other Jamaican side dishes. Enjoy!
