Caribbean-Style Grilled Shrimp And Pineapple

This recipe of Caribbean-style grilled shrimp and pineapple is an absolute treat for those warm summer evenings.

Grilled Shrimp and Pineapple Recipe Ingredients

  • 1/2 cup lime juice
  • 4 garlic cloves
  • 2 tbsp achiote seeds or equal parts turmeric and paprika
  • 2 tsp allspice berries
  • 2 tsp dried oregano
  • 2 tsp salt
  • 1 1/2 tsp whole black peppercorns
  • 1/2 cup extra virgin olive oil
  • 1 pineapple, peeled, cored, and chopped into 1/2 in. thick slices
  • 2 onions, cut into 1/2 in. wedges
  • 3 sprigs, fresh Oregano
  • 1 lb. shrimp
  • 1 lemon, cut into wedges
  • Skewers

How to Make Caribbean-Style Grilled Shrimp and Pineapple:

  1. Soak the skewers in cool water for 30 minutes.Blend lime juice, garlic, achiote seeds, allspice berries, oregano, salt and peppercorns in a KitchenAid Blender until smooth.
  2. Gradually add olive oil to the mixture as the blender is running to create an emulsion. Assemble the skewers with 3 shrimp, 3 pineapple wedges, and 2 onion pieces and transfer to a shallow pan.
  3. Add three sprigs of fresh oregano to the pan of skewers once they are finished being assembled. Pour the achiote paste over the skewers evenly and marinate for 1-3 hours.
  4. Prepare a charcoal grill to high heat.Place the skewers on the grill and cook about 3-4 minutes a side.Serve with a squeeze of lemon.

Caribbean Seafood dish in Butter SauceSeafood in Butter Sauce Recipe Ingredients

  • 1 lb lobster or shrimp meat
  • 3 tbsp butter
  • 1 tsp lemon juice
  • 3 cloves garlic, crushed
  • 1 onion, sliced
  • 1 tomato, sliced
  • 1 dash hot pepper sauce
  • 1 tsp flour
  • 1/2 teaspoon pepper
  • 1 dessert spoon cognac

How to Make Seafood in Butter Sauce:

  1. Put seafood pieces into a bowl. Mix in lemon juice and crushed garlice. Add Salt, pepper and hot pepper sauce. Allow to stand for one hour refrigrated.
  2. Then melt butter in pan over heat and add flour. Then add tomato and onions and stir for about one minute. Add seafood (seasoned) and marinade and stir well.
  3. Add cognac. Allow to simmer for about 3-5 minutes. Serve immediately with green salad and french rolls.

beer-battered fish
Beer-battered Fish Ingredients:

  • 1 pint (560 ml) vegetable oil
  • 2 lb (908 g) fresh fish fillets (snapper or grouper)
  • 1 tbsp fresh lime juice
  • 4oz (113 g) flour
  • 1 tsp seasoned salt
  • 1/4 tsp pepper
  • 1 can beer

How to Make Beer-battered Fish:

  1. Fill a deep fryer or a deep saucepan three-quarter full with oil. Heat to 375°F. Cut the fish fillets into serving-size pieces and brush with lime juice.
  2. Mix two thirds of the flour with the salt and pepper in a bowl. Add the beer gradually, beating until the batter is smooth. Put the remaining flour on a plate.
  3. Coat each piece of fish with flour, then dip it into the batter, coating well. Fry in the hot oil for 7-8 minutes, turning once. Drain on paper towel or brown paper.

Serves: 4
Serve hot with fried potatoes and coleslaw.
