Jamaican Rice and Peas

Jamaican rice and peas is a classic dish that is enjoyed not only in Jamaica but all over the Caribbean. Despite its name, the dish is actually made with kidney beans and not peas, and it’s a staple in Jamaican cuisine.

The flavorful rice dish is a perfect accompaniment to many Caribbean dishes, and it’s often served with jerk chicken or curry goat. The rich flavors of coconut milk and thyme are combined with the creaminess of the beans and the nuttiness of the rice to create a dish that is both filling and delicious.

Here is a recipe for Jamaican rice and peas:

Ingredients:

1 cup dried kidney beans
4 cups water
2 cloves garlic, minced
1 medium onion, diced
1/2 cup coconut milk
1/2 cup water
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 cup long grain rice

Instructions:

Rinse the kidney beans and place them in a large pot with 4 cups of water. Bring to a boil and then reduce the heat to a simmer. Cook for 1 hour, or until the beans are tender.

In a separate pot, heat a tablespoon of oil over medium heat. Add the garlic and onion and cook until the onion is translucent.

Add the coconut milk, water, salt, pepper, and thyme to the pot and bring to a boil.

Stir in the rice and reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is tender.

Stir in the cooked kidney beans and cook for an additional 5 minutes.

Serve the rice and peas hot.

Making veggie fried rice recipe. Fried rice is a widely consumed meal throughout the Caribbean due to the considerable Chinese influence there. Many Chinese cuisine are prepared on the islands with a distinctive Caribbean touch as a result of the Chinese immigrants who migrated to the Caribbean after slavery. I sincerely hope you try this dish for fried vegetarian food.

Here is a recipe for vegetable fried rice:

Ingredients:

2 tablespoons vegetable oil
2 cloves garlic, minced
1 cup diced vegetables (such as carrots, bell peppers, onions, peas, and/or corn)
3 cups cooked white rice
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
salt and pepper, to taste
2 tablespoons chopped green onions

Instructions:

Heat the vegetable oil in a large pan or wok over medium-high heat.
Add the garlic and diced vegetables and cook until the vegetables are tender, about 5-7 minutes.
Add the cooked rice, soy sauce, and sesame oil to the pan and stir to combine.
Season with salt and pepper to taste.
Stir in the green onions.
Serve the fried rice hot.

Caribbean Lemon-Scented Broccoli Soufflé Recipe
Broccoli Souffle Recipe Ingredients:

  • 1 pkg frozen broccoli or 2 cups chopped fresh broccoli
  • 1 egg
  • 1/2 cup mayonnaise
  • 1 tin mushroom soup
  • 1 cup bread crumbs (fine)
  • 1 cup grated cheese
  • 1 tbsp grated onion

How to Make Broccoli Souffle:

  1. Cook broccoli in boiling, salted water for a few minutes so that it is tender but remains firm. Chop very fine.
  2. Mix beaten egg, mayonnaise, mushroom soup, grated onion and cheese together. Combine with chopped, cooked broccoli.
  3. Then pour into greased baking dish, sprinkle with breadcrumbs, dot with a litter butter and bake at 350F for about 3/4 hours or until knife comes out clean.
