Chilled fruit soups have become popular throughout the Caribbean in recent years. And this Frosted Raspberry Soup Recipe is no exception. Served in a frosted glass bowl and garnished with yogurt and mint, this Raspberry soup will entice your taste-buds and will have you coming back for more and more.

You can also try ripe papaya or mango pulp for raspberries and substitute white wine for red. Remember recipes are just to guide you, putting your personal spin on any dish is what makes it a great dish.

Frosted Raspberry Soup

Ingredients

  • 2 cups fresh or frozen raspberries
  • 1/2 cup sugar
  • 2 1/2 tablespoons lemon juice
  • 1/2 cup yogurt or sour cream
  • 2 cups cold water
  • 1/2 cup red wine
  • Yoghurt for garnish
  • Mint sprigs for garnish

Instructions

  1. Puree raspberries with sugar, lemon juice and yogurt.
  2. Stir in water and wine.
  3. Strain soup to remove raspberry seed, if desired.
  4. Chill thoroughly. Serve in frosted glass bowls or stemmed glasses and garnish each bowl with a spoonful of yogurt and a mint spring.

Cherry Cheesecake

Ingredients

  • 1 cup flour
  • 1/4 cup sugar
  • 1 teaspoon grated lemon or lime peel(rind)
  • 1/2 cup butter
  • 1 slightly beaten egg yolk
  • 1/2 teaspoon vanilla

Instructions

  1. Blend together flour, sugar and peel.
  2. Cut in butter until mixture is crumbly.
  3. Add egg yolk and vanilla and mix well.
  4. Pat dough on bottom and sides of a greased 22 cm (9-in) pan.
  5. Bake in a moderate over for 8 to 10 minutes until light brown.
  6. Put aside to cool.

Cherry Cheesecake Filling

Ingredients

  • 225g (8-oz) creamed cheese
  • 1/4 teaspoon vanilla
  • 1/2 teaspoon grated peel (rind)
  • 1 cup sugar
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 egg yolk
  • 1/4 cup whipping cream
  • 1 cup stewed garden cherries
  • Pineapple pieces

Instructions

  1. Soften cream cheese, add vanilla and lemon peel, then sugar, flour and salt.
  2. Add eggs and yolk, one at a time, beating after each just to blend.
  3. Gently stir in whipping cream. Put into the crust-lined pan, bake in hot oven for 12 minutes. Reduce heat to moderate and bake until cake is firm.
  4. Cool in pan for about half an hour. Loosen crust in pan and remove when cold.
  5. Top with pineapple pieces and stewed cherries.

Caribbean Recipe...Coconut pineapple carrot cake
Coconut Pineapple Carrot Cake Ingredients:

  • 1 ½ cups granulated sugar
  • 4 eggs
  • ½ cup coconut milk
  • 3 medium carrots (grated)
  • 1 cup chopped walnuts
  • 1 ½ cup vegetable oil
  • 2 cups flour
  • 2 ½ tsps cinnamon
  • 1 cup crushed pineapple
  • Frosting:

  • 1 pkt (8oz) cream cheese
  • 1 tsp vanilla essence
  • 2 tbsps carnation evaporated milk
  • ½ cup butter
  • 3 cups icing sugar

How to Make a Coconut Pineapple Carrot Cake:

  1. Beat sugar, oil and eggs to thoroughly combine in a bowl, mix flour, coconut milk, baking powder, salt and cinnamon slowly, add flour mixture to sugar mixture, stir in carrot, pineapple and walnut.
  2. Pour batter into 2 greased 8” layer cake pans and bake in a preheated oven at 350? F for 1 hour or until done. Cool cakes completely.

Frosting:

  1. Beat cream cheese, butter & vanilla until smooth and fluffy.
  2. Add icing sugar and milk gradually, beat until well combined, spread frosting between and on cakes and decorate as desired.
