Caribbean Lemon-Scented Broccoli Soufflé Recipe
Broccoli Souffle Recipe Ingredients:

  • 1 pkg frozen broccoli or 2 cups chopped fresh broccoli
  • 1 egg
  • 1/2 cup mayonnaise
  • 1 tin mushroom soup
  • 1 cup bread crumbs (fine)
  • 1 cup grated cheese
  • 1 tbsp grated onion

How to Make Broccoli Souffle:

  1. Cook broccoli in boiling, salted water for a few minutes so that it is tender but remains firm. Chop very fine.
  2. Mix beaten egg, mayonnaise, mushroom soup, grated onion and cheese together. Combine with chopped, cooked broccoli.
  3. Then pour into greased baking dish, sprinkle with breadcrumbs, dot with a litter butter and bake at 350F for about 3/4 hours or until knife comes out clean.

spanish pie
Spanish Pie Recipe Ingredients:

  • 1 9″ pie crust (baked)
  • 2 tbsp butter
  • 1 lb fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 2 tbsp milk
  • 1 cup whipping cream
  • 1 small onion, chopped
  • 6 mushrooms
  • 1 oz. Parmesan cheese
  • 1/4 tsp pepper
  • 2 cup cottage cheese
  • 2 eggs
  • 4oz. cheddar cheese

How to Make a Spanish Pie:

  1. cook spinach until wilted. Rinse under running cold water, then cool and squeeze dry. Chop Parmesan cheese in medium size bits and set aside. Melt butter in skillet over heat and add onion, saute for about five minutes. Set aside.
  2. Chop mushrooms in slices and add to onion. Then chop spinach and add to onion. Add seasonings and place over heat, mixing well. Line pie crust with cottage cheese (half) and then mix other half with onion mixture. Add milk and top cottage cheese with onion mixture in pie crust.
  3. Grate cheddar cheese in bowl. Then add eggs and whipping cream and mix for one minute. Spoon over onion mixture on crust. Sprinkle with Parmesan cheese and bake at 400F for about 20 minutes. Allow to stand for 15 minutes before serving.

Caribbean recipe for sweet potatoes stewed. Sweet Potato Stewed Recipe Ingredients:

  • 1/4 cup brown sugar
  • 4 medium sweet potatoes
  • 1 tbsp cinnamon
  • 1/2 cup water
  • 3 tbsp butter
  • 1 tsp ground nutmeg

How to Make Sweet Potato Stewed:

  1. Coat th saucepan with a little butter. peel,wash and slice potatoes inot 1/2″ thick pieces. Combine sugar and nutmeg. Then place a layer of potatoes in greased saucepan and sprinkle with sugar mixture.
  2. Place another layer of potatoes and coat with sugar mixture until all ingredients are used up. Place cinnamon stick in the centre of potatoes.
  3. Dot balance of butter on top of potatoes, pour water over and bring to a boil over fire. Reduce heat, cover tightly and simmer until tender –approx 30-40 minutes.
