Shrimp Mould Recipe

Shrimp Mould

Cool and tasty shrimp mould recipe; shrimp served with grated onions, shrimp or crab meat, garlic powder, Knox gelatine and cream cheese.

Note:(Crab-meat can be substituted for shrimp meat in this recipe. Besides, it can be used as an entree or as hors d’oeuvres and a small mold per person may be served with a salad.)

Shrimp Mould Recipe Ingredients:

  • 1 ½ cups shrimp meat or crab meat
  • ½ teaspoon garlic powder
  • 1 small onion grated
  • 1 envelope Knox gelatine
  • 1 teaspoon salt
  • ¼ cup cold water
  • 1 teaspoon hot pepper sauce
  • ½ cup boiling water
  • 1 teaspoon lime juice
  • 6 stuffed olives, sliced
  • 1pkg. cream cheese

How to make Shrimp Mould:

Combine gelatine and cold water in a bowl. Stir for a couple minutes and then add boiling water and stir until dissolved. Then in another bowl soften cream cheese and using a beater combine cream cheese and gelatine mixture until smooth. Then stir in salt, hot pepper sauce, garlic powder, grated onion, lime juice and shrimp meat. Turn into a bowl or mould (or moulds) and chill until firm. Garnish with slices of stuffed olives.

coconut-tart

As a young boy, I can recall there was this small pastry shop right in the centre town called “Franz” which made the most delicious Coconut, Guava, and Pineapple Tarts…I’ve ever tasted…I was truly addicted!

I was so disappointed when the pastry shop closed down for good; but there are quite a few Caribbean-style coconut tarts recipes out there – like this one for example.

Coconut tart with golden brown butter crust, freshly grated coconut, chopped almonds and Lemon rind, flavored with almond extract and sprinkled with sugar to top it off.

Coconut Tart Recipe Ingredients:

  • 1 egg
  • 2 drops almond extract
  • ½ cup water
  • 2 cups freshly grated coconut
  • ½ cup sugar
  • 2 tablespoon chopped almonds
  • 1 lemon rind
  • Pastry for crust and strips

How to make Coconut Tart:

Combine coconut, sugar (leaving one tablespoon behind) and water in saucepan. Place over heart and cook until coconut become translucent and most of the liquid is gone. Remove, cool slightly and then add almond extract. Whip egg with lemon rind until fluffy, remove rind and combine egg with coconut mixture and then spoon into shell. Sprinkle with almonds. Place pastry strips criss-cross, sealing ends with a little water. Sprinkle with tablespoon sugar, brush with milk and bake in hot oven until golden brown (350F).

Pigeon Peas Soup was the first soup I fell in love with as a child. Of course, back then it was Maggi Chicken Soup or pumpkin soup. To date, in my mind, there is still nothing better than good Pigeon Pea Soup…thanks to my grandma – who still uses this simple and rich homemade Pigeon Peas soup recipe.

Pigeon Peas Soup Recipe Ingredients:

  • 1 cup dry pigeon peas
  • 1 sprig thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups water
  • 1 clove garlic, crushed
  • ¼ Ib. smoked pork hocks
  • 2 eddoes
  • 1 onion, finely chopped
  • 1 doz. dumplings

How to make Pigeon Peas Soup:

Soak peas in enough cold water to cover overnight. Drain and discard water. In a large pan put peas and ham hocks and cook until both are quite soft. You may have to add water to maintain approximately 4 cups liquid for the soup. Remove ham hocks and cut into small pieces and return to soup. Add seasonings
and return to heat and allow to simmer gently. Then peel eddoes and cut into pieces and make up dumplings. Add to soup and continue to simmer until both are tender. Then serve very hot.
