coconut-crusted mahimahi

Coconut-Crusted Mahimahi with Pan-Roasted Garlic, Rosemary, and Tomato Sauce is a simple, fresh-tasting dish; a crisp coconut coating keeps the fish moist and gives it real island flair.

Coconut-Crusted Mahimahi Ingredients:
For fish:

  • 4 tablespoons extra-virgin olive oil, divided
  • 1 garlic clove, smashed
  • 2 (5-to 6-ounces) pieces of skinless boneless mahimahi fillet
  • 1/4 cup all-purpose flour
  • 1 large egg, lightly beaten
  • Rounded 1/3 cup grated dried unsweetened coconut

For sauce:

  • 1/4 cup extra-virgin olive oil
  • 1 garlic clove, smashed
  • 1/4 teaspoon finely chopped rosemary
  • 1 medium tomato, seeded and cut into 1/4-inch dice
  • 1/2 tablespoon finely chopped parsley
  • 1/2 tablespoon finely chopped chives
  • 1 tablespoon rice-wine vinegar (not seasoned)

Instructions for Coconut-Crusted Mahimahi with Pan-Roasted Garlic, Rosemary, and Tomato Sauce:
Marinate fish:

Mix 2 tablespoons oil, garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a bowl and marinate fish in it while making sauce.

Make sauce:

Heat oil (1/4 cup) in a small skillet over low heat until just warm, then add garlic and rosemary and heat until fragrant, about 1 minute. Toss with remaining sauce ingredients, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a bowl.

Marinate fish:

Mix 2 tablespoons oil, garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a bowl and marinate fish in it while making sauce.

Make sauce:

Heat oil (1/4 cup) in a small skillet over low heat until just warm, then add garlic and rosemary and heat until fragrant, about 1 minute. Toss with remaining sauce ingredients, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a bowl.

Make sauce:

Coat and cook fish: Preheat oven to 450°F with rack in middle.

Put flour, egg, and coconut in separate shallow bowls. Dredge curved side of each fillet in flour, shaking off excess, then dip floured side in egg and then in coconut. (Discard marinade.)

Heat remaining 2 tablespoons oil in an ovenproof heavy medium skillet over medium heat until it shimmers. Cook fish, coated side down, until coconut is pale golden, 30 to 60 seconds. Carefully turn fish over and transfer skillet to oven. Roast until fish is just cooked through, 6 to 7 minutes. Serve fish with sauce.

savoy,onion and egg pie

A great idea for a vegetarian main this holiday season – simply a perfect pastry and scrummy filling.The only downside, is getting all the filling in the 20cm pie. But all in all a great vegetarian dish.

Ingredients:

  • 2 tbsp olive oil
  • 450g new potatoes , diced
  • 1 medium red onion , thinly sliced
  • 450g savoy cabbage , shredded
  • 1 garlic clove , crushed
  • 1 tsp cumin seeds
  • 1 dried chilli , crushed
  • 1 quantity shortcrust pastry (see ‘Goes well with’ below) made with 2 tbsp lightly crushed cumin seeds
  • 4 medium eggs
  • 1 tbsp milk , to glaze

Method:

1. Heat oven to 200C/fan 180C/gas 6. Heat 1 tbsp of the oil in a large frying pan, then gently cook the potatoes and onion for about 10 mins until golden and tender. (You may need to do this in two batches.) Season, then set aside.

2. Heat the remaining oil in the pan. Add half the cabbage, garlic, cumin seeds, chilli, seasoning and 1 tbsp water, then cook for 3-4 mins until the cabbage is wilted and tender. Remove from the pan and repeat with the remaining ingredients.

3. Roll out half the pastry and use to line a 20cm pie plate. Place the potatoes and onions in the bottom, then top with the cabbage mixture. Make 4 wells in the cabbage and crack an egg into each.

4. Brush the pastry border with water. Roll out remaining pastry, then use to cover the pie, trimming the edges and pinching together to seal. Brush the pastry with milk. Make a hole in the centre to allow steam to escape. Place on a baking sheet and cook for 25-35 mins until crisp and golden.

Avocado and pineapple salad is a simple recipe that perfectly highlights the subtle creaminess of the avocados and the more assertive pineapple – that’s according to my lovely wife, who have fallen in love with this salad.

I personally find that pineapple together with avocado to be a strange mix for a salad – don’t get me wrong, I enjoy pineapple and avocado but just not together. Well what I can say my wife likes it, so maybe you might it too. Try it!

Ingredients:

  • 8 cups iceberg or other crisp lettuce
  • 2 cups fresh pineapple chunks
  • 1 medium red onion, thinly sliced
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup white vinegar
  • 1/3 cup fresh orange juice
  • 1/4 cup sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 medium avocados, sliced
  • Fresh lime wedges

Method:

Toss together first 3 ingredients in a large bowl. Whisk together oil and next 5 ingredients. Pour desired amount of dressing over salad mixture, and toss well. Spoon salad onto individual plates. Arrange avocado slices over salads; serve with lime wedges. Serve immediately.
