Sweet Lime Balls Recipe Ingredients:

  • 2 cups grated green pawpaw
  • Grated rind of 1 lime
  • 2 tsp. lime juice
  • 1/2 cup water
  • 1 cup granulated sugar dash of green colouring

Sweet Lime Balls Recipe Instructions:

Put pawpaw into a saucepan and cover with water. Boil, cool strain of water. Press pawpaw to squeeze out all water. Put sugar and the half cup of water into the saucepan, boil till thick, stir pawpaw, lime juice and lime rind, boil again for 2 minutes, stirring constantly. Remove from heat, stir in the colouring, cool slightly. Take up mixture by spoonfuls, roll into balls, then roll in fine sugar, put on a plate to dry

Stuffed Yams Recipe Ingredients:

  • 1 medium-size ladies yam (3lbs)
  • 2 ozs bacon – chopped
  • 2 ozs chicken liver
  • 1 head chive
  • 1 onion
  • ½ cup milk
  • 2 tbsps. Margarine

Stuffed Yams Recipe Instructions:

Peel yam and cut lengthwise. Boil in salt water until tender. Drain carefully to avoid breaking and let cool. Scoop out yam leaving a shell of 1″ in depth. Mash scooped yam. Chop bacon, liver, chive and onion. Saute in margarine. Add crushed yam and milk. Mix thoroughly. Fill in cavity of yam. Place under until brown.

Serve as main dish.
Serves six (6) persons.

Favorite Tannia fritters recipe, made with mashed Tannia mixed with onions, celery, lime juice, and flour. Tannia Fritter is tasty, easy option if you are looking for a vegetarian side-dish.

Tannia Fritters Recipe Ingredients:

  • 1 lb tannia
  • 2 sprigs celery
  • 1 medium onion
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1 tsp. lime juice
  • 1 egg
  • 2 Tbsp. milk

Tannia Fritters Recipe Intructions:

Wash, peel and grate Tannia, put into a bowl. Chop or mince onion and celery finely, add to tannia. Add salt, lime juice, flour. mix with a fork. Heat fat in frying pan. Beat egg stiffy. Fold into tannia mixture with the milk. Fry by spoonful in hot oil, turning over to brown on both sides. Drain on absorbent paper. Serve hot with the meal.
