Passion Fruit now in my list of favorites: you can make very easy and quick a natural juice, which is not only tastes wonderful, but also very useful. For to prepare passion fruit juice you do not need (as for many other exotic fruits) to torment to clean the skin or squeeze a juice.

Passion fruit has oval shape with thick yellow skin (or in some places of the world it is violet), which is enough to pierce by the end of sharp knife on 2-3 centimetres and then easily to turn across the diameter of the fruit, dividing passion fruit on two halves. Inside it will be yellow sweet and sour gruel and seeds.

Scrap by spoon to any convenient deep dish, add sugar to taste (I usually do 4-5 tbsp sugar to 4-5 passion fruits) and blend or mix well with a fork.

Then add three or four cups of water (liquid should be juicy-amber colour) and mix well (or use blender). Strain the seeds through a sieve to the juice jar and squeeze well seeds with pulp. Try to taste the juice, and if necessary – add sugar. The whole process takes literally two or three minutes.

What is useful

  • The fruit flesh contains: water, proteins, carbohydrates, fibre, calcium, phosphorus, iron, vitamins Group B, A, C, sodium, serotonin.

Passion fruit season in Dominica is usually around May-June.

Some people hear Colonial Chicken, and they think KFC 🙂 – Colonial Chicken recipe is one of those recipes that every home cook should have in their collection. It uses a small amount of ingredients – chicken, onions, stock, green pepper, sour cream, paprika, and butter – and is especially useful on those busy days when you’re just too busy to get creative.

Ingredients:

  • 1 chicken (cut into pieces)
  • 2 large onions, sliced
  • 1 tomato chopped
  • 1 cup stock
  • 1 clove garlic, crushed
  • ¼ cup butter
  • 1 green pepper, sliced
  • 1 tablespoon paprika (spice made from peppers)
  • 1 cup sour cream
  • 1 cup sour cream


Method:

Wash and drain chicken. Put into a bowl and sprinkle with salt, pepper, and garlic. Mix well and allow standing for 2-3 hours. In a large skillet, heat butter and brown chicken pieces – removing from pan as they are done. Then sauté onions, green pepper and tomato until wilted. Add paprika and stock. Bring to a boil point and add chicken pieces. Cover and simmer until tender (about 40 minutes). Remove chicken to platter and keep warm. Stir in sour cream, but do not allow it to boil. Spoon over chicken and serve hot.

eggnog

Traditional Caribbean holiday eggnog recipe with eggs, milk, cream, nutmeg, vanilla, lime rind and brandy (or Guiness Stoute).
I grew up with eggnog, and every Christmas holiday my grandma would make this eggnog recipe – we kids drank up as much of it as we could. If your Grandma shared the same recipe like my grandma, then instead of Jim Bean she would have used a Guinness Stoute which blends well together with the milk, nutmeg, and vanilla assents. But as food lovers which have try out new recipes even if it’s different from what we know. Do you’ve a special recipe for making your holiday Eggnog. Let’s hear how it’s done in the comments.

Caribbean Eggnog Recipe Ingredients:

  • 4 egg yorlks
  • 1 green lime rind
  • ¼ teaspoon fresh ground nutmeg
  • 2 tablespoons brandy
  • 4 cup fresh milk
  • 1 small piece vanilla bean
  • 1 small piece cinnamon stick
Caribbean Eggnog Recipe Method:
Beat the egg yolks with the lime rind adding the sugar gradually until well mixed. Remove lime rind and set egg mixture aside. Put milk in saucepan with vanilla, cinnamon and grated nutmeg and bring to a boil over heat. Pour boiling milk over egg mixture stirring all the time to prevent egg hardening. Then stir over low heat to 3-5 minutes to thicken just a little. Remove from heat, discard spices. And brandy (or Guiness Stoute) and pour into glasses and serve with slices of sponge cake.
