Fresh Tomato, Lentil and Onion Soup

Fresh Tomato, Lentil and Onion Soup is a delicious wholesome soup, ideally served with thick slices of wholemeal or granary bread.

Ingredients:

  • 2 tsp sunflower oil
  • 1 large onion, chopped
  • 2 sticks celery, chopped
  • ¾ cup split red lentils
  • 2 large tomatoes, skinned and roughly chopped
  • 3 ¾ cups vegetable stock
  • 2 tsp dried herbes de Provence
  • salt and freshly ground black pepper chopped parsley, to garnish

Cooking Instructions:

Heat the oil in a large saucepan. Add the onion and celery and cook for 5 minutes, stirring occasionally. Add the lentils and cook for 1 minute. Stir in the tomatoes, stock, dried herbs, salt and pepper. Cover, bring to the boil and simmer for about 20 minutes, stirring occasionally. When the lentils are cooked and tender, set the soup aside to cool slightly. Puree in a blender or food processor until smooth. Season with salt and pepper, return to the saucepan and reheat gently until piping hot. Ladle into soup bowls to serve and garnish each with chopped parsley.

Serves 4.

To make a Simple Tomato Sauce, you will need 2 chopped Spanish onions, 4 tbsp olive oil, 2 crushed garlic cloves, 2x400g cans chopped plum tomatoes, 2 tbsp torn basil leaves, salt, and ground pepper.

1. Gently fry the onions in the oil for 10 minutes. Add the Garlic and cook for a further 10 minutes, stirring occasionally, until very soft.

2. Add the tomatoes and season. Bring to the boil and simmer gently for 30 minutes or until the sauce is thick and pulpy. Add the basil and check the seasoning.

Fish Curry

I love this Fish Curry recipe. It’s quite easy to make, and the important thing to remember is that you need to saute the curry powder, cumin, onion, and green tomato together before adding your fish. That’s what gives you that rich curry sauce.

Fish Curry Recipe Ingredients:

  • 6-8 fish steaks (thin)
  • 1 teaspoon cumin
  • 2 tablespoon oil
  • 1 oz. curry powder
  • 1 Onion, chopped
  • 1 clove garlic, crushed
  • 2 slices green tomato, finely chopped
  • ½ teaspoon salt

How to make Fish Curry:

Clean, wash, and season the fish. Allow fish to marinate for 2-3 hours. Then pour oil into skillet and place over heat. Add garlic and allow it to become brown. Add curry cumin, onion, salt, and green tomato. Saute vegetables by adding a little water if necessary. Then add about 2 cups water and stir well. Cook until thickened (about 10 minutes). Then add fish and cook in curry sauce for abut 15-20 minutes. Serve immediately with steamed rice.
