Coconut Cream Pie Ingredients:

  • 5 oz (140 g) sugar
  • 5 tbsp cornstarch
  • 1/2 tsp salt
  • 1 ½ pints (840 ml) milk
  • 3 egg yolks, lightly beaten
  • 1 tbsp butter
  • 1 ½ tsp vanilla essence
  • 2 tbsp coconut rum
  • 8 oz (227 g) fresh shredded coconut baked pie shell
  • whipped cream for decoration
  • 2 tbsp toasted coconut

How to Make Coconut Cream Pie:

  1. Place the sugar, cornstarch, salt and milk in a saucepan. Cook over a medium heat, stirring constantly until the mixture thickens. Stir half of the hot mixture into the egg yolks.
  2. Return to the saucepan and blend. Boil for 1 minute, stirring constantly. Remove from the heat, and add the butter, vanilla, coconut rum and shredded coconut.
  3. Pour into the baked pie shell and chill. Top with whipped cream and sprinkle with toasted coconut.

Serves: 8
Prevent heated milk from scorching by rinsing the pan with hot water before using it.

Nutmeg ice creamNutmeg Ice Cream Ingredients:

  • ¾ pint (420 ml) milk
  • ¾ pint (420 ml) heavy cream
  • 3 large eggs
  • 6 oz (170 g) sugar
  • 1 tbsp freshly grated nutmeg
  • 1/8 tbsp salt
  • ¼ tbsp vanilla essence

How to Make Nutmeg Ice Cream:

  1. Place the milk and cream in a saucepan and bring to the boil. Whisk together the eggs, sugar, nutmeg, salt and vanilla essence in a bowl. Add half of the milk mixture to the eggs and continue whisking.
  2. Stir in the remainder of the milk mixture and return to the heat. Cook the custard over moderate heat, stirring constantly with a wooden spoon until it registers 175°F (79°C) on a candy thermometer.
  3. Transfer the custard to a metal bowl set in a large bowl of ice and cold water. Stir until it is cold. Freeze the custard in an ice-cream freezer according to the manufacturer’s instructions.

Makes: 1 quart (1.1 litres)
Serves: 8

  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 2 eggs
  • 2 cups sifted flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 (15 ozs.) can whole cranberry sauce
  • 1/4 cup chopped walnuts
  • 2 tbsp melted butter
  • 1/4 cup raisins
  • 1 tsp cinnamon
  • 2 tablespoons brown sugar

How to Prepare Cranberry-Raisin Coffee Cake:

  1. Cream butter and sugar. Then add eggs and beat until fluffy. Sift in dry ingredients alternately with milk.
  2. Combine drained cranberry sauce, walnuts and raisin. Spoon 2/3 of batter into greased pan, then spread 2/3 of cranberry mixture over.
  3. Add balance of batter and top with cranberry mixture balance. Sprinkle with melted butter, brown sugar and cinnamon. Bake until knife comes out clean (about 3/4-1 hour), at 350F.
