chicken souse Chicken Souse Ingredients:

  • 3 1b (1.8 kg) chicken
  • 2 fresh hot peppers
  • 2 tsp salt
  • 2 tbsp lime juice
  • 1 onion
  • 1/2 sweet pepper
  • 8 oz (227 g) Irish potatoes

How to Make Chicken Souse:

  1. Clean the chicken and cut into small pieces.Grind or crush the hot peppers and mix with the salt. Use this to season the chicken.
  2. Squeeze the lime juice on the chicken and let stand to marinate for 1 hour (or overnight). Chop the vegetables Place the marinated chicken and the vegetables in a saucepan.
  3. Add sufficient water to cover the chicken. Boil for 30 minutes, or until the chicken is tender. Serve in a dish with the gravy as a dip.

Serves: 10

Beer-battered Fish

Beer-battered Fish Ingredients:

  • 1 pint (560 ml) vegetable oil
  • 2 lb (908 g) fresh fish fillets (snapper or grouper)
  • 1 tbsp fresh lime juice
  • 4oz (113 g) flour
  • 1 tsp seasoned salt
  • 1/4 tsp pepper
  • 1 can beer

How to Make Beer-battered Fish:

  1. Fill a deep fryer or a deep saucepan three-quarter full with oil. Heat to 375°F. Cut the fish fillets into serving-size pieces and brush with lime juice.
  2. Mix two thirds of the flour with the salt and pepper in a bowl. Add the beer gradually, beating until the batter is smooth. Put the remaining flour on a plate.
  3. Coat each piece of fish with flour, then dip it into the batter, coating well. Fry in the hot oil for 7-8 minutes, turning once. Drain on paper towel or brown paper.

Serves: 4
Serve hot with fried potatoes and coleslaw.

  • 5 oz (140 g) flour
  • 2 tsp baking powder
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 4 oz (113 g) margarine
  • 2 oz (56 g) brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla essence
  • ½ pint (280 ml) mashed ripe breadfruit
  • 1 tsp finely grated orange rind
  • 2 tbsp orange juice

How to Make Ripe Breadfruit Cake:

  1. Sift the flour, baking powder, nutmeg and salt together. Cream the margarine and sugar together until fluffy. Add the beaten eggs one at a time, followed by the vanilla essence.
  2. Beat in the mashed breadfruit and the orange rind. Fold in the flour mixture in quarters, adding alternately with the orange juice to give a soft dropping consistency.
  3. Put the mixture in a greased 6-inch (15-cm) diameter baking pan and bake at 375°F for about minutes, or until golden brown and well done. Leave in the pan for about 5 minutes, then turn out and cool on a rack..
