clam chowder

Clam Chowder (Caribbean style) is white, with cream and potatoes. It’s thick, rich, and creamy. Goes well with crackers on those cold and wet days – warms you up nicely… 🙂

Clam Chowder Recipe Ingredients:

  • 1 pt. clams
  • 2 large potatoes, cubes
  • 2 ozs. salt pork fat
  • 1 onion, sliced
  • 2 ozs. butter
  • 4 ozs. flour
  • 1 pt. milk
  • 1 clove garlic
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 lemon

How to make Clam Chowder:

Clean the clams, washing them well with lemon juice and cold water. Cook in 1 cup of water. Strain and set water aside. Chop the clam flesh into cubes. Then fry onion and salt pork fat. In the meantime parboil potatoes. Then in a casserole, put a layer of potatoes followed by a layer of clams. Add salt, pepper and garlic.

Sprinkle flour on top and cover with another layer of potatoes and more flour. Pour in 1 cup boiling water and simmer for 20 minutes. Add milk and butter. Bring to boil and cook for another 3 minutes. Add water clams were cooked in, simmer for a further 2 minutes. Serve hot.

fried calf liverLiver with Brandy Recipe Ingredients:

  • ½ lbs. calf liver
  • 8 ozs. Mushrooms
  • 2 ozs. Butter
  • 8 ozs. Rice
  • 2 tomatoes
  • 1 tablespoon brandy
  • 1 clove garlic
  • Salt, pepper
Instructions on how to cook Liver with Brandy :

Cook the rice and keep warm. Melt 1/2 oz. butter and saute quartered tomatoes gently. Add sliced mushrooms. Set aside. Using rest of butter, fry thin liver slices after sprinkling with salt, pepper and garlic. Place liver on top of rice, pour warmed brandy over liver and serve immediately. Garnish with tomatoes and mushrooms.

I can remember going to this friend’s house, and every week his grandmother will put a fresh bottle of Hot Pickles on the table at every meal (including breakfast). Until one day I tried one…and let me tell you – damn that’s hot and spicy!

Ingredients:

  • 1 doz. hot peppers (red and yellow)
  • 1 doz. pickling onions or shallots
  • 1 teaspoon salt
  • 1 cove
  • 6 2” strips raw carrots
  • 6 2” strips string beans
  • Vinegar
Method:

Cut each pepper into strips of four lengthwise. Place in wide mouth jar. Add onions, carrots, beans, clove and salt. Then pour vinegar to cover ingredients filling it to the top. Seal and allow it to stand for 24 hours and use as required.
