Mango Kiwi Salsa with Reduced Balsamic Lime Sauce is a quick and simple side dish recipe, and it goes well with curried chicken. The Reduced Balsamic Lime sauce goes well on other fruit as well.

Mango Kiwi Salsa with Reduced Balsamic Lime Sauce Ingredients:

  • 1 Mango peeled & chopped
  • 1 teaspoon Lime juice
  • 1 Kiwifruit peeled & chopped
  • Crushed red pepper to taste
  • 1/8 cup White Balsamic Vinegar
  • Kosher Salt to taste
  • 1 teaspoon Red onion diced
  • Black pepper freshly ground to taste

Instructions for Mango Kiwi Salsa with Reduced Balsamic Lime Sauce:

In a saucepan bring the Balsamic vinegar to a simmer and reduce the vinegar by approximately half or until it coats a spoon with a light syrup texture.

Remove from heat and transfer to a small bowl.

Add the lime juice, crushed red pepper, Kosher salt and freshly ground black pepper to taste.

Spoon mixture over salsa and toss to coat well.

Sweet Potato on a whole adds a tropical twist to any Caribbean dish, and goes well with any spicy or grilled dishes. Fast and easy to make. Definitely a recipe you want to try if you’re looking to spice up any dinner party.

Ingredients:

  • 1/2 pound Carrots – peeled and chunked
  • 1/4 cup Orange juice – or pineapple juice if desired
  • 1 pound Sweet potates – peeled and 1 inch cubed
  • 1 tablespoon honey – to taste
  • 1 cup Banana – cut in chunks (1 large banana)
  • 1/4 teaspoon Salt
  • 1/2 cup Pineapple – fresh, diced
  • 1/4 teaspoon Black pepper – coarse, fresh ground

Instructions for Caribbean Sweet Potatoes:

In a pot of boiling water, add the carrots and boil for about 3 minutes. Then add the sweet potato cubes and cook until both are tender (about 10 – 12 minutes).

Drain and dump into a bowl. Add remaining ingredients and mash lightly. You want a somewhat chunky texture. Adjust seasoning with salt and pepper as desired.

Serve with grilled meat or other spicy Caribbean dishes.

peanut soup recipe

Peanut Soup recipe is fabulous and somewhat different; but very intriguing, rich and spicy with West African and Caribbean roots. The onion, celery stalk, green peppers, chicken, thyme and peanut combine wonderfully.

Ingredients:

  • 4 tablespoons margarine
  • 1 onion, grated
  • 1 stalk celery, grated
  • 1 clove garlic, crushed
  • 1 sprig fresh thyme
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • 1 tablespoon chopped green pepper
  • 2 cups milk
  • 1 tablespoon flour
  • 4 cups stock (beef or chicken)
  • 1 ½ cups peanut butter (crunchy)
  • or 2 cups ground peanuts

Method:

Prepare ground peanuts if you are not using peanut butter. Then place butter in a saucepan over low heat. Add onion, celery and one teaspoon chopped fresh thyme and sauté for about 5 minutes stirring. Add flour. Then slowly add stock. Increase heat to medium and stirring all the time add peanut butter or ground peanuts and cook for about 10 minutes. Reduce heat and add milk very slowly. Then add seasonings. Allow to simmer over low heat for about 15 minutes. Strain and serve immediately very hot, garnished with chopped green peppers.
