I have had a craving for a good Cream of Carrot Soup for a while now. I used to get a good bowl at a small restaurant that has since closed but never made it myself before. My grandma recently made a pot us for me. I must say, it went down good with some locally made bread – that are made from old time stone ovens. Anyway, I think this recipe is incredible.

Ingredients:

  • ½ cup evaporated milk or Cream
  • ½ lb carrots, grated
  • ¼ teaspoon chopped thyme
  • ¼ teaspoon pepper
  • ¼ lb salt pork of beef
  • 1 onion, grated
  • small tannia, chopped
  • 1 clove garlic
  • 2ozs. Butter
  • 4 cups water or stock
Method:

In a large sauce pan over heat sauté carrot, onion, garlic, salt pork and thyme in butter. Do not allow to become brow, so cook over low heat covered for about 5 minutes. Then add 4 cups water or stock and bring to a boil. Lower heat and cook covered until all vegetable are very soft. Cool slightly and put into blender after removing salt pork. Return to heat and cook until mixture thickens. Just before serving add cream. Allow to become well heated, but do not boil. Serve immediately.

I use to work at Hotel called the Fort Young Hotel, and this was one of my most favorite cocktail recipes. At the hotel they were called Exotic Fruit Punch. Now I’m not working at the hotel, when some of my friends drop by to visit and I put this together in the blender. They are dying to know my recipe, well I guess today is their lucky day. Fruit punch (Mele) is refreshing cocktail anytime of the year and great for people on fruit diets.

Tropical Fruit Punch Recipe Ingredients:

  • 1 cup paw paw slices
  • 1 ripe banana
  • 2 tablespoons honey
  • 2 slices pineapple
  • 1 cup orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon grenadine syrup
  • 6-8 block of ice-cubes
Tropical Fruit Punch Recipe Instructions:

Combine fruit, fruit juices, honey and grenadine in blender. Then add ice-cubes and blend until very cold and is well blended. Serve in wide glasses immediately while mixture still holds a head. Finally garnish with a Cherry or a slice on pineapple.

Let me say that personally I’m not a big fan of Black Pudding; I just don’t like the whole idea of (pig or cow) blood thing – just a little too out there for me if you know what I mean. But Black Pudding is a very popular recipe in the eastern Caribbean. It is traditionally eaten on Saturdays nights and Sunday morning breakfast. There are many different variations according to the island, as the fillings differ slightly. Even through the cooking procedure in the same.

The name Boudaine is derived from the French meaning stomach and is very apt in that sausage casing is the stomach of the animal.

Ingredients:

  • 2 bottle blood (26 ozs.each)
  • 1 lb onions, finely chopped, minced
  • 1 head garlic, finely crushed
  • 1 fresh hot pepper
  • 1 bunch green onions or chives
  • ½ lb fat or 1 cup vegetable oil
  • 3 tablespoon salt
  • 1 dessert spoon chopped fresh thyme
  • 3 slice soaked bread (squeezed dry)
  • 6 yards sausage casing
Method:

Chop onions, peppers, garlic, chives, thyme. Chop fat very fine until it is almost pulp. In a skillet over medium heat, melt fat or heat oil. The sauté seasonings for a couple minutes – they must not be overcooked. Then remove from heat and add all other ingredients except blood. Mix well and allow it to stand until cold. Then add blood. Mixing well.

Using a big funnel, fill sausage casing to form sausages by tying end with string and every six inches or so, tying casing with a piece of string. When you have formed 6-8 sausages, again secure end with a piece of string and cut away and continue forming sausages in this manner until filling is used up. Then set aside.

Line a large pan with clean towel. Add water to about half way and place over medium heat. When water is warm, add pudding, lower heat and allow it to cook VERY SlOWLY. Water must never be allowed to boil for fear that the pudding will burst. Check pan often and as soon as the blood is hardened; the black pudding is ready to be served. To check, prick with a pin.
