Ajiaco is a very old-fashioned stew-like dish, incredibly tasty and nutritious, which features several of the most typical root vegetables used in traditional Hispanic Caribbean cuisine. This dish is so hearty that it can be served as the only dish in a meal, especially if it is served for lunch. It is so simple and easy to make, you must try it!

Ingredients:

  • 4 large potatoes, cut into fourths
  • 1 large ñame, cut into medium pieces
  • 4 corn on the cob, cut in halfs
  • 1 small calabaza, cut into medium pieces
  • 4 malangas, cut into fourths lengthwise
  • 4 medium boniatos, cut into medium pieces
  • 2 medium yucas, cut into 1″ chunks
  • 1 lb beef (flank or round beef for stewing, cut in 1″ chunks)
  • 2 Tbs vegetable oil for braising the beef
  • 2 garlic cloves, peeled and crushed
  • ½ tsp salt or to your taste
  • 2 to 4 cups of water
Method:

Season the beef with salt and generously with garlic powder. Peel and cut all the vegetables. Braise the beef with cloves of garlic in a large pot; then add water and cook for 10 to 15min.
Add all the other ingredients, add the rest of the water, cover, and simmer slowly over medium-low heat for 20 to 30 minutes, or until beef is tender. Serve with fresh lime wedges in deep soup bowls.

Chefs Tip:

You can use a pressure cooker and cut the cooking time almost by half. Just put the lid on the cooker after you have braised the beef and added all the ingredients. Cook for 15 minutes after the cooker’s pressure valve begins to whistle and rock. Use 1st quality round or flank beef.

Dip it in the stew to soften it as you enjoy this heartiest of meals. Enjoy!

eggnog

Traditional Caribbean holiday eggnog recipe with eggs, milk, cream, nutmeg, vanilla, lime rind and brandy (or Guiness Stoute).
I grew up with eggnog, and every Christmas holiday my grandma would make this eggnog recipe – we kids drank up as much of it as we could. If your Grandma shared the same recipe like my grandma, then instead of Jim Bean she would have used a Guinness Stoute which blends well together with the milk, nutmeg, and vanilla assents. But as food lovers which have try out new recipes even if it’s different from what we know. Do you’ve a special recipe for making your holiday Eggnog. Let’s hear how it’s done in the comments.

Caribbean Eggnog Recipe Ingredients:

  • 4 egg yorlks
  • 1 green lime rind
  • ¼ teaspoon fresh ground nutmeg
  • 2 tablespoons brandy
  • 4 cup fresh milk
  • 1 small piece vanilla bean
  • 1 small piece cinnamon stick
Caribbean Eggnog Recipe Method:
Beat the egg yolks with the lime rind adding the sugar gradually until well mixed. Remove lime rind and set egg mixture aside. Put milk in saucepan with vanilla, cinnamon and grated nutmeg and bring to a boil over heat. Pour boiling milk over egg mixture stirring all the time to prevent egg hardening. Then stir over low heat to 3-5 minutes to thicken just a little. Remove from heat, discard spices. And brandy (or Guiness Stoute) and pour into glasses and serve with slices of sponge cake.

Pickled Breadfruit Recipe Ingredients:

  • 1 large breadfruit (not too green)
  • 25 ml spoon (1,5 tbsp.) lime juice
  • 1 onion, peeled and chopped
  • salt and pepper to taste
Pickled Breadfruit Instructions:
Peel the breadfruit, cut out the core and cut into thick slices. Wash.Put breadfruit in a saucepan with enough water to cover. Simmer, covered, for about 30 minutes, or until breadfruit is tender. Meanwhile, mix lime juice with onion and salt and pepper. Drain breadfruit and cut into thin slices.Place on a platter and spoon pickle over. Serve hot with salted fish or meat.
Serves 4-6.
