One-pot meal Recipe Ingredients:

  • 100 g (4 oz) tripe
  • salt to taste
  • 25 g (1 oz) chopped onion
  • 1/2 blade chives, chopped
  • 1 hot pepper, de-seeded (whole)
  • 25 ml (1,5 tbsp.)oil
  • 15 ml spoon (1 tbsp.) sugar
  • 50 g (2 oz) green pigeon peas
  • 500 ml (1 pt) water or coconut milk
  • 100 g (4 oz) pumpkin, peeled and diced
  • 100 g (4 oz) tannia, peeled and diced
  • 100 g (4 oz) potatoes, peeled and diced

One-pot meal Recipe Instructions:
Wash tripe and drain. Season with salt, onion, chives and hot pepper. Allow to stand for 20-30 minutes, then remove seasoning. Heat oil in a frying pan. Add sugar and cook gently until dissolved. Add tripe and fry until golden. Add peas and cook gently for about 5 minutes, stirring occasionally. Gradually add 250 ml (1/2 pt) of the water or coconut milk, stirring constantly. Simmer gently, covered, for about 1 hour. Add the remaining ingredients and more salt, if required. Simmer, covered, for another 15-20 minutes, adding more water if necessary to prevent drying out. Serve hot. Serves 2-3.

Curried Chicken Recipe Ingredients:

  • 400 g (1 lb) chicken
  • salt and pepper to taste
  • 5 ml spoon (1 teasp.) lime juice
  • 2 x 15 ml spoon (2 tbsp.) oil or margarine
  • 2 cloves garlic, peeled and chopped
  • 1 onion, peeled and chopped
  • 1/2 christophene, peeled and chopped
  • 15 ml spoon (1 tbsp.) curry powder
  • 1 ml spoon (1/4 teasp.) geera
  • 250 ml (1/2 pt) stock
Curried Chicken Recipe Instruction:

Cut chicken into large pieces and season with salt, pepper and lime juice. Heat oil or margarine in a large frying pan. Add garlic, onion, christophene and powdered geera and curry powder. Fry gently until soft. Add chicken and brown on all sides. Add stock and bring to the boil. Simmer gently, covered, for 20-25 minutes. Place chicken in a warmed serving dish. Pour over cooking liquor. Serve with Fluffy Rice.Serves 4.

Beef Stew Recipe Ingredients:

  • 200 g (8 oz) stewing beef (shin or shoulder)
  • 5 ml spoon (1 tsp) salt
  • 2 ml spoon (1/2 tsp) pepper
  • 2 blades chives, chopped
  • 1 spring thyme, chopped
  • 1 medium-sized onion, peeled and chopped
  • 3 x 15 ml spoon (3 tbsp.) oil
  • 5 ml spoon (1 tsp) brown sugar OR 1 x 15 ml spoon (1 tbsp.) gravy browning
  • 500 ml (1 pt) cold water
  • 15 ml spoon (1 tbsp.) vinegar
  • 15 ml spoon (1 tbsp.) flour
Beef Stew Recipe Instructions:

Wipe meat and remove excess fat and gristle. Cut into neat cubes and season with salt, pepper, chives and thyme. Heat oil in a deep pot or frying pan. Add sugar and cook gently until dissolved. If using gravy browning, add at this stage. Add onion and fry gently until soft. Add meat and brown on all sides. Add water and vinegar, and bring to the boil. Simmer gently, covered, for 1-1 1/2 hours.

About 5 minutes before completion of cooking, mix flour to a smooth paste with a little cold water. Add to stew and blend well.Serve with rice, dumplings or a starchy vegetable.Serve 2.
